In the Barroso region, this cut is known as “pork hand”, preserving ancestral methods of salting, slow curing, and natural smoking. The result is a product with a deep flavour, firm texture, and striking aroma, developed over 18 months of curing.
Weighing around 6 kg per piece, it is a practical alternative to traditional ham, ideal for those seeking the same quality and authenticity, but in a more manageable and easy-to-store format.
